Now that we've been buying romaine lettuce consistently, I eat salad every day or every other day. And now I've become a lover of alfalfa sprouts and mung bean sprouts, so those are a must have. And carrots, of course, chopped baby carrots. And sometimes chopped black olives. And my salads are never complete without mozzarella cheese, any kind. I'll also use avocados if I have them on hand, and cucumbers. If we have asparagus, I'll chop it up happily; it is my number one favorite vegetable (I can eat almost one pound of asparagus in a sitting). If we have mushrooms of any kind, they get chopped up and thrown in. I almost always use olive oil and red wine vinegar for dressing. Although if I have an exotic fruit-based dressing, like pomegranate blueberry, I'll use that. I also love dried berries, especially blueberries. I'm trying to develop a taste for nuts; usually I don't like the taste of any nut. Are there any nuts that don't have a strong flavor?
Anyone have favorite salad recipes they'd like to share?

Whisky's Favorite Arugula Salad

Ingredients:

-cooked brown rice
-cooked salmon (the pinker the better), flaked
-chopped arugula (http://www.gourmetsleuth.com/arugula.htm)

Toss together and finish it off with Annie's "Sesame and Shitake" salad dressing, or a similar sesame/asian dressing.

The salmon is totally optional, or you can substitute good quality tuna. Adding dried sea veggies would be yummy too.

If I thought it wouldn't kill my stomach, I'd even think about making myself one.

I like all the things you mentioned in my salads. I also like sliced or slivered almonds and dried cranberries.

I have some a recipe that is yummy for celery seed dressing. It was originally for a pecan, pear and gorgonzola salad. But I like it on everything.

Usually I can do salad every day or every other day without a problem. I'm on high dose antibiotics for the next 19 (now I think - I've had 8 of 63) days. I managed to get Lyme Disease from a tick bite. I'm lucky that way. I need to do something more to support my digestive system to get through them I think. Bleh.

warm field greens with sun dried cherries, candied walnuts, vegan cheese and a warm balsamic and orange blossom vinaigrette.

arugula, tomatoes and olives dressed with extra virgin olive oil and aged red wine vinaigrette, topped with crispy croutons.

If you want an interesting flavor combination, I'd suggest a combination of normal greens (I tend to like romaine or organic baby spinach), sliced tomatoes, razor-thin cut cucumbers & red onion, & peeled pear slices. (You can always swap out the tomatoes w/something like diced red peppers, olives, shredded carrot, etc.as you prefer.)

Over this I like any variation of a basic vinaigrette (olive oil, cracked black pepper, mustard, fresh-grated citrus & a touch o/citrus juice or balsamic). Also, if you'd like to add nuts but need something subtle, pine nuts or almond slivers go well.

The tang in the vinaigrette combines w/the sweetness o/the pears & taste of the almonds are really quite good.
